Roasted Red Bell Pepper Hummus

This savory reddish orangeĀ  hummus is great on sandwiches, crackers, in collard green wraps, and even as a salad dressing.

Ingredients

1 (15-oz) can chickpeas, drained and rinsed

2 cloves garlic, peeled and roughly chopped

2 Tbsp lemon juice

1 Tbsp white or rice vinegar

1 tsp mustard

1/2 tsp cumin

1/2 tsp paprika

1 roasted red bell pepper (from a jar)

Instructions

Makes 1.5 cups
Time: 5-10 minutes
  1. Add all ingredients to a food processor and blend until smooth.  
  2. Add a bit of water if you find the hummus too thick to blend. 
  3. Enjoy with lots of veggies and on your favorite bread, crackers, potatoes, etc.
