Roasted Red Bell Pepper Hummus
This savory reddish orange hummus is great on sandwiches, crackers, in collard green wraps, and even as a salad dressing.
1 (15-oz) can chickpeas, drained and rinsed
2 cloves garlic, peeled and roughly chopped
2 Tbsp lemon juice
1 Tbsp white or rice vinegar
1 tsp mustard
1/2 tsp cumin
1/2 tsp paprika
1 roasted red bell pepper (from a jar)
Makes 1.5 cups
Time: 5-10 minutes
- Add all ingredients to a food processor and blend until smooth.
- Add a bit of water if you find the hummus too thick to blend.
- Enjoy with lots of veggies and on your favorite bread, crackers, potatoes, etc.
